Eileen Patrice Mitchell, 62, of Bethlehem, PA was called home to the Lord on Saturday, November 1, 2025. Born March 13, 1963, she was the daughter of the late Lucile E. (Welker) and Paul R. Mitchell.
How does one find the words to describe the creative soul that is Eileen? She was a gifted artist across a multitude of mediums, and she had a real passion and dedication to the arts. Her brilliance radiated through her drawings, paintings, her eye for design, and photographs. She loved cinema, theatre, and music, and she made sure to share all of it with her son. She enjoyed attending plays and musicals and she had many favorites including Pippin and the Phantom of the Opera. Some of her favorite genres of films were documentaries and rom-coms, and she loved to sing and play music while she cleaned. She loved everything involving art and design, she loved to draw and paint, she loved architecture, and she loved to watch videos about renovations to chateaus and villas. A staunch advocate for the environment, Eileen helped and supported many efforts for park conservation and water protection, with the latter being one of her most dedicated causes.
She was an excellent cook and baker, making magic with even the most humble of ingredients (an honorable mention to her browned butter icing banana cake). Eileen was also the family historian and record keeper- preserving heirlooms and old family recipes. Eileen was very spiritual, she studied astrology and she had an affinity for learning about a variety of religions and realms, but above all she trusted in God. She had a deep love and appreciation for all animals, with felines and dolphins among her favorites. She had a genuine green thumb, she enjoyed keeping and taking care of all different types of plants and it brought her immense joy to watch them thrive. She had an eye for color, composition, and beauty, and she worked as an interior designer for most of her life. She studied at the Baum School of Art and designed shop displays at the once famous Hess's Department Store in Allentown, specializing in many of the seasonal and holiday window and store displays.
She also attended the prestigious Tyler School of Art in Philadelphia, and was an avid reader, spending many hours bookworming through treasure troves of knowledge in public libraries. She loved to study and apply her learnings of the art of Feng Shui in all her designs. But her most cherished accomplishment of all was being an amazing mother. She raised her son Daniel with a strong sense of justice and taught him to be empathetic and to care for others. She loved to spend time with him soaking up culture and the arts and raised him with a deep affection for both. She was truly a selfless and deeply loving and creative soul and the world is darker with her absence. Her playful sense of humor never wavered, even in trying times. She was strong in her faith and believed that we shall all be reunited with our loved ones in the end. She was a unique light in this world that will be sorely missed.
She will be lovingly remembered by her son, Daniel Unger; brothers, Brian and Glenn Mitchell (and wife, Donna); sisters, Wendy Young and Jenaé Serrano; nieces Michelle Mitchell, Nicole Rubino, Kimberly Mitchell, Abigail Mitchell, and Tyler Young; nephews, Stephen Young, Christian, Zakary, and Luke Mitchell.
A viewing will be held on Thursday, November 13, 2025 from 10-11 a.m. at St. Francis if Assisi 1046 W. Cedar St. Allentown, PA 18102. A Mass of Christian Burial will follow at 11 a.m. in the Church. Burial will be held at Holy Saviour Cemetery.
